Skinny Selections Hot Italian Chicken Sausage Pizza
Multigrain pizza dough
1/2 cup Pizza sauce
1 cup shredded mozzarella cheese
3 links Skinny Selections Hot Italian Chicken Sausage
1/2 cup yellow onions, sliced
1/4 cup red bell pepper, sliced
Vegetable oil and a little corn meal
Pre-heat oven to 400°F.
Roll out pizza dough to form crust and place on a baking sheet that is lightly oiled and sprinkled with corn meal.
Top evenly with pizza sauce.
Sprinkle mozzarella cheese on evenly.
Slice chicken sausage into rounds about ½” thick and place evenly over cheese along with the sliced onions and peppers.
Put your baking sheet in the oven and cook for about 15 minutes or until the crust is browned and cheese is bubbling.
Apples & Cinnamon Chicken Sausage Quinoa Salad
2 cups of quinoa, cooked according to instructions
3 links of Skinny Selections Apples & Cinnamon chicken sausage, diced
1 red pepper, diced
1/8 cup of red onions, diced
1/4 cup dried cherries
1/4 cup raw almonds, chopped
1 cucumber, peeled and diced
1 orange, peeled and cut into chunks
4 Tbsp Olive oil
3 Tbsp Balsamic vinegar
1/4 tsp salt
1/4 tsp pepper
Heat 2 Tbsp of Olive oil in a small sauce pan over medium heat.
Sautee onions and red pepper dices.
When onions are translucent and peppers are soft, add diced chicken sausage and heat until sausage is warmed through.
Whisk together 2 Tbsp olive oil and balsamic vinegar in small bowl with salt and pepper.
Place the cooked quinoa in a large serving bowl and stir in the onion, pepper, sausage mix, cherries, cucumber and oranges.
Then blend in dressing to taste.
Sprinkle almond pieces over the top. Can be served warm or cold.
Spinach & Garlic Chicken Sausage Omelet
3 links Spinach & Garlic chicken sausage
5 large eggs
1 tomato, diced
1/4 cup skim milk
1 splash olive oil
1/8 tsp sea salt
1/8 tsp black pepper
5 slices whole grain bread
1 piece of fruit
Chop dice chicken sausage
Crack eggs into bowl
Whisk milk into eggs
Heat olive oil in skillet to medium-high
Reduce heat to medium and pour egg mixture into skillet
Sprinkle chicken sausage, diced tomatoes, salt, and pepper evenly on top of egg
When eggs start to brown on the bottom, carefully fold the omelet in half by lifting up one side and folding it over
Cover pan and cook for 3 more minutes
Turn and cook for 3 more minutes on the other side
Serve with whole grain toast and sliced fruit. Enjoy!
Lemon Garlic Chicken Sausage with Roasted Rosemary Potatoes
1 package Skinny Selections Lemon Garlic Chicken Sausage
10 small red potatoes, quartered
2 Tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried rosemary
1/2 tsp dried thyme
Preheat oven to 450°F.
Place quartered potatoes in a pan and coat evenly with oil, salt, pepper, rosemary and thyme.
Spread out in a single layer and bake for 20 minutes until potatoes begin to brown.
Stir in chicken sausage pieces and bake for an additional 5 minutes.
Serve with a side of steamed broccoli.
Skinny Selections Grilled Chicken Kielbasa with Sauerkraut
1 package of Skinny Selections Chicken Kielbasa
2 tablespoons olive oil
1 yellow onion, sliced
2 cups sauerkraut, drained
Honey Mustard for dipping
Cut chicken kielbasa in half lengthwise and then in about 4 pieces on a bias (producing about 8 diagonal slices).
In a large skillet over medium heat, heat olive oil, add onions and sauté until onions are slightly browned.
Add chicken kielbasa pieces and brown.
Stir in drained sauerkraut and heat until warmed through.
Add a pinch of salt and black pepper to season, if desired.
Serve with honey mustard to dip the kielbasa pieces.
Simply Seasoned Chicken Sausage
1 package of Skinny Selections Simply Seasoned Chicken Sausage
1 white onion, sliced
1 Tbsp olive oil
1/4 cup whole grain mustard
2 Tbsp molasses
1 cup light stock
5 whole wheat hot dog buns
Heat the oil in a large sauce pot over medium-high heat.
Add the onions and cook until browned (about 15 minutes).
Add the mustard, molasses and stock mix well.
Add in chicken sausage, stirring-covering them with sauce.
Simmer on medium heat for about 20 minutes.
Serve chicken sausages in buns topped with onions and sauce.
Skinny Selections Mild Italian Chicken Sausage Rotini
1 package of Skinny Selections Mild Italian chicken sausage
1 lb. Whole wheat rotini pasta
3 tbsp. Olive oil
2 cloves minced garlic
1 small yellow onion chopped
1 bag broccoli florets
Salt & pepper to taste
Microwave broccoli in a microwavable bowl or steam-in bag for 5 minutes.
Boil salted water.
Quarter chicken sausage and cut into chunks.
Add pasta when water reaches a vigorous boil.
Heat oil in a small saucepan at medium high.
Sauté garlic, onion, and chicken sausage pieces.
Drain pasta when al dente.
Spoon chicken sausage, olive oil, garlic, and onion mixture over top of pasta and toss.
Stir in broccoli florets and serve.
